Star Wars Inspired Recipes for May the 4th

Several years back, I had a good friend recovering from some cancer treatments and a group of friends made her a “meal train”. My date fell on May the 4th. Knowing her husband was a huge Star Wars fan, I decided to capitalize on the May the Force (4th) be with you theme and went all out.

I thought I would share a few of those with you- so whether you're a Jedi Master or a Padawan in the kitchen, these Star Wars recipes will transport you faster than the Millennium Falcon in hyperdrive.

7 Leia Dip

Ingredients

 

1 16-oz can refried beans

3 Tbsp taco seasoning, homemade, or 1 oz packet, divided

2 cups sour cream

2-3 cups guacamole, homemade or storebought

2 cups shredded Mexican-style cheese, or cheddar cheese

4 Roma tomatoes, diced (about 2 cups)

½ to 1 cup sliced black olives, 2-4 oz, or added to preference

½ bunch green onions, (¼ cup) finely chopped

½ small bunch cilantro, (¼ cup) finely chopped

Instructions

Heat the refried beans in a saucepan or in a bowl in the microwave until warm to soften them up and make spreading easier. Stir in half of the taco seasoning. Spread the beans into the bottom of a 9×13 glass casserole dish.

Next layer and spread the guacamole over the beans.

In a separate bowl, stir together sour cream and the remaining half of the taco seasoning. Spread the sour cream over the guacamole.

Sprinkle on the cheese. Add tomatoes, black olives, green onions, and cilantro. Serve with Tostito Chips or Frito Scoops (TROOPER SCOOPERS) for dipping.

 

OBI-WAN Kabobbies

Ingredients

1 pound smoked sausage, sliced into 1-inch pieces (I recommend Andouille for a kick!)

1 pound large shrimp, peeled and deveined

1 red bell pepper, cut into chunks

1 yellow bell pepper, cut into chunks

1 green bell pepper, cut into chunks

1 medium zucchini, sliced

1 red onion, cut into wedges

2 tablespoons olive oil

2 teaspoons garlic powder

1 teaspoon paprika

Salt and pepper to taste

Skewers (metal or soaked wooden skewers)

Instructions

1. Prep the Skewers: If you’re using wooden skewers, soak them in water for about 30 minutes to prevent burning.

2. Marinade: In a bowl, combine olive oil, garlic powder, paprika, salt, and pepper. Whisk it all together until it’s well-blended.

3. Toss: In a large bowl, add sausage, shrimp, and all the chopped vegetables. Pour the marinade over them and toss until everything is generously coated.

4. Assemble: Thread sausage, shrimp, and veggies onto the skewers, alternating for a beautiful look. Don’t be afraid to get creative with the order!

5. Grill: Preheat your grill to medium-high heat. Place the skewers on the grill and cook for 2-3 minutes on each side, or until the shrimp are pink and opaque, and the sausage gets nice grill marks.

6. Serve: Once done, take them off the grill and serve hot! I love serving them with Vader Taters.

Vader Taters

Ingredients

1.5 -2 pounds small potatoes like gold potatoes, red potatoes, or multicolored

2 tablespoons olive oil

1 0.7 ounce pack of Good Seasonings Italian Salad Dressing Mix

1/4 teaspoon salt

1/4 teaspoon ground black pepper

Instructions

Preheat your oven to 400 degrees F. Make sure the oven rack is in the middle of the oven. Cut the potatoes in half. (No need to peel the potatoes.)

Place the potatoes on a baking sheet. Drizzle with olive oil and then sprinkle with Italian seasoning, salt, and pepper.

Toss the potatoes in the oil and seasonings. Make sure to get them all coated. Place the potatoes cut side down on the baking sheet.

Roast the potatoes for 20-30 minutes or until the potatoes are fork tender.

 

Wookie Cookies

Ingredients

1/2 C butter

2 C granulated sugar

1/2 C whole milk

4 Tbsp unsweetened cocoa powder

Pinch of salt

1/2 C peanut butter the sweet stuff - jiff or skippy

2 tsp vanilla

3 C quick-cooking oats - important

1 C sweetened coconut

Instructions

Add the Butter, sugar, milk, cocoa powder and salt to a saucepan.

Bring to a rapid boil and let boil for 1 minute.

Remove from heat.

Stir in the peanut butter and vanilla extract until smooth, then stir in the oats and coconut.

Using a medium cookie scoop (or 2 tablespoonfuls), drop onto parchment paper.

Let cool until set, about 30 minutes.
